Grilled Jerk Chicken with Orange Sauce

This is a super easy jerk chicken recipe. It goes great with my Red Bean and Rice recipe and a fresh salad or steamed green beans.

Ingredients

  • 2 boneless chicken breasts
  • 2 tbsp. dry jerk seasoning (see below)
  • Juice and chopped pulp of one seedless orange
  • 1 tbsp. brown sugar
  • 1 tbsp. orange rind

Directions

  1. Coat the chicken on both sides with the jerk seasoning and grill for about 15 minutes or until the chicken is cooked through, occasionally turning.
  2. Meanwhile, in a saucepan over medium heat, stir together the orange juice, orange pulp and brown sugar until the sauce is thick, adding more orange juice if sauce is too thick.
  3. Just before chicken is cooked through, sprinkle with orange rind. Pour sauce over cooked chicken.
  4. Serve with side dishes of choice. If you using the Red Bean and Rice recipe, you can either set it up in your slow cooker earlier in the day or prepare it up to 2 days before use. Reheat in a non-stick skillet with a touch of oil or butter to keep it from sticking or clumping.

Dry Jerk Seasoning Mix

This mix can be used on fish, beef, chicken, pork, or grilled vegetable. This batch should last you a while… unless you’re like me and look for excuses to use it. I have used it on rice, grains and in soups, stews and chili.

Ingredients

  • 1 tbsp. ground allspice
  • ½ tbsp. ground nutmeg
  • ½ tbsp. cinnamon
  • 1 tsp. garlic powder
  • 1 tsp. onion powder
  • 1 tsp. salt
  • 1 tsp. black pepper
  • ½ tsp. cayenne pepper
  • ½ tsp. chili powder
  • ½ tsp. dried thyme

Combine all ingredients well and place in a spice jar.
