Ginger Carrot and Lentil Soup
The ginger adds a different spin on a traditional Carrot Soup. I am also a big fan of cumin and carrot combos. I hope you enjoy this soup as much as my family.
Ingredients
- 1 cup red lentils
- 1 lb carrots, (about 5), peeled and sliced
- 1 onion, chopped
- 8 thin slices fresh ginger
- 2 cloves garlic, minced
- 1-1/2 tsp ground cumin
- 1/2 tsp salt
- 1/4 tsp pepper
- 4 cups water
- 2 cups vegetable broth
Garnish:
- 1/4 cup chopped fresh cilantro or fresh parsley
- 1/2 cup low-fat plain yogurt
Diections:
- In slow cooker, combine lentils, carrots, onion, ginger, garlic, cumin, salt, pepper; pour in water and broth.
- Cover and cook on low until vegetables and lentils are tender, 6 to 8 hours.
- Using immersion blender, or in stand blender in batches, purée soup until smooth.
- Garnish: Stir cilantro into yogurt; swirl or dollop onto each serving of soup.
