Ginger Carrot and Lentil Soup

The ginger adds a different spin on a traditional Carrot Soup. I am also a big fan of cumin and carrot combos. I hope you enjoy this soup as much as my family.

Ingredients

  • 1 cup red lentils
  • 1 lb carrots, (about 5), peeled and sliced
  • 1 onion, chopped
  • 8 thin slices fresh ginger
  • 2 cloves garlic, minced
  • 1-1/2 tsp  ground cumin
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 4 cups water
  • 2 cups vegetable broth

Garnish:

  • 1/4 cup chopped fresh cilantro or fresh parsley
  • 1/2 cup low-fat plain yogurt

Diections:

  1. In slow cooker, combine lentils, carrots, onion, ginger, garlic, cumin, salt, pepper; pour in water and broth.
  2. Cover and cook on low until vegetables and lentils are tender, 6 to 8 hours.
  3. Using immersion blender, or in stand blender in batches, purée soup until smooth.
  4. Garnish: Stir cilantro into yogurt; swirl or dollop onto each serving of soup.
