Cheeseless Pizza
This is a great recipe to have on hand for vegan guest. It can be served as a meal with a salad or sliced up as an appetizer.
Ingredients:
- 1lb prepared pizza dough
- 3 cups tomato sauce
- 1 jar marinated artichokes hearts, drained and quartered
- 1 cup black olives, pitted and halved
- 3 roasted red bell peppers, skin removed and sliced into ½-inch strips
- Caramelized Onions:
- 3 tbsp. olive oil, divided
- 2 medium sweet onion, cut into ¼-inch slices
Directions:
- Preheat oven to 450F. Grease a 17×11-inch rimmed baking sheet or 16-inch round pizza pan.
- Caramelized Onions: In a large skillet, heat 2 tbsp. olive oil over medium-high heat until very hot but not smoking. Add sliced onions and drizzle with remaining 1 tbsp. oil. Reduce heat to low, cover and cook, stirring every 10 minutes to prevent burning and sticking, for 25 to 30 minutes or until onions are soft and brown.
- Meanwhile, on a prepared baking sheet, spread out dough using your fingertips to gently press the dough out so it covers the entire sheet. Bake in preheated oven for 6 to 8 minutes or until dough starts to harden but not brown. Let cool in pan on rack for about 10 minutes.
- Spread tomato sauce over crust and scatter caramelized onions, artichokes, olives and roasted peppers over tops. Bake for 10 -12 minutes or until crust is browned around the edges.
