Black and White Chicken Chili

This is a unique one, made with white cannellini beans, black beans, green chiles and chicken, and topped with cheese and sour cream. It’s a pale chili with bold flavors.

Ingredients

  • 1 large onion, diced
  • 2 cloves, garlic
  • 1 lb boneless, skinless chicken breasts, cut into 2-inch pieces
  • 1 (15 ounce) can cannellini beans, or other white beans, drained and rinsed
  • 1 (15 ounce) can black beans, drained and rinsed
  • 1 (7 ounce) can green chilies
  • 1 (14.5 ounce) can chicken broth
  • 1 tbsp. chili seasoning
  • 1 tsp. cumin
  • 1 tsp. dried oregano
  • ½ tsp. salt
  • ¼ tsp. black pepper
  • cheese, sour cream, cilantro (optional, for serving)

Directions

  1. Add everything to slow cooker and give it a stir. Cook on low for 7-8 hours or high 3-4 hours.
  2. Serve nice and steamy, topped with cheese, sour cream, or cilantro if you like.
